Cluckin’ Awesome Chicken Wings 

You are never, ever going to eat better chicken wings in your life than these little flappers. You don’t even need to sauce these suckers; they’re perfect the way they are. You absolutely need to cook ’em low and slow at first, then turn them up so they get super crispy, and you’ll feel like you’re biting into a Dorito. A chicken Dorito. I’m not sure how appetizing that sounds, but if they can successfully sell Mountain Dew-flavoured Doritos, I’m pretty sure chicken wing flavour would be a wild success. But I digress.

The only complaint you will get (because there has to be at least one, am I right?) is that there aren’t enough. I make these with all the cut-up veggies on the side and pretend we’re in a fucking wing joint and with a big ol’ serving of Homemade Ranch on the side. 

What Goes In It 

 2 lbs of chicken wings, already separated into wingettes and drums 

1 tsp of seasoning salt 

1 tsp of sea salt 

Any sauce that you like (BBQ, hot sauce, honey garlic, whatever --optional) 

 

How You Make It  

Preheat oven to 250ºF. Note: This is not eating temperature; this is low and slow cooking temperature. Lay wings on a parchment-lined baking sheet. You will most likely need two trays, because you don’t want them to touch. Bake for 30 minutes.

When 30 minutes are up, take your wings out and flip them over then turn your oven up to 425ºF. They are not done at this point! For the love of god, do not eat them yet! If you’re wild and crazy like me, you can rotate the racks at this point but it’s not a must.

Bake for 25 minutes and flip them one more time. Again, the rotation of trays is optional, but optimal. You do you, boo. Bake for another 20 minutes. Once they are crispy and golden brown, transfer them to a giant bowl and liberally sprinkle those suckers with salt. Serve immediately and listen to blissful silence as everyone eats a meal they love.
