Holy Sh*t, It’s a Sheet (Pan Dinner)
I want dinners to be as quick and painless as possible. And don’t get me wrong, I love to cook but I don’t always want to fucking cook, you feel me? Sheet pan dinners are so fabulous because you can toss all of the shit on one pan, throw it in the oven and be done!
We are big fans of chicken in my house. Well, to be fair, I’M a big fan of chicken and I do the cooking. Therefore everyone is a big fan of chicken because I make the rules, baby!
This honey garlic chicken meal never gets any complaints. It’s sweet, salty, sticky and all around delicious. We eat ours on top of rice or noodle. Or straight off the pan, because that’s how we roll.
Honey Garlic Chicken, No Cluckin’ Around
What Goes In It
3 boneless, skinless chicken breasts, chopped
3 bell peppers (red, yellow, or green) chopped
1 large onion, (Spanish, yellow or red) chopped
2 tbsp olive oil
1 tsp salt
1 tbsp smoked paprika
2 tbsp garlic powder
Honey Garlic Sauce
3 tbsp honey
1/4 cup soy sauce
1 tbsp brown sugar
3-4 garlic cloves, minced
1 tbsp rice vinegar
2 tbsp water
How You Make It
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup because no one has time to be scrubbing dishes. Eff that. Set that baby aside.
Next, slice the bell peppers and onion into big bite-sized chunks. They’ll cook better it they’re all the same size.
Cut the chicken breasts into similar sized chunks but don’t stress here. No one is measuring your shit for accuracy.
Plop the chicken, peppers and onions into a large bowl. Now you’re going to season the shit out of it.
Drizzle in the olive oil, sprinkle in the smoked paprika, garlic powder and salt then get to mixing. You can use a large spoon or your hands but make sure everything is evenly coated in the flavour goodness.
Now, dump the contents of the bowl onto your baking sheet and spread that shit out until it’s an even layer. Great work. Now we’re moving on to the sauce.
In a small bowl (or whatever size bowl you like), whisk together the honey, soy sauce, minced garlic, rice vinegar, and water until well combined. Drizzle the deliciousness all over the chicken and veggies on the sheet pan - make sure you get every last drop!
Pop the sheet pan into the preheated oven, because you totally remembered to preheat it, and cook for 25-30 mins, stirring once about halfway through. The chicken is cooked when it reaches an internal temp of 165°F. Nobody wanted raw chicken.
Hot tip: if you notice anything browning too quickly, cover the pan loosely with foil.
Serve this gloriousness on top of rice, or beside it if your children will allow nothing on their plate to touch.
