Easiest (and best) Potato Salad Ever!

Kentucky Fried who? If your only frame of reference for potato salad is the shit you get in a styrofoam container from KFC, I’m going to blow your fucking mind.

Summer is the absolute best time to make potato salad. It is synonomous with BBQ’s because it sits well in the hot sun while you spend 40 minutes telling your children to get out of the pool already or you’re going to lose it! I’m not suggesting you let this salad sit in the sun, but you get where I’m going with this.

I grew up eating this bowl full of perfection and I cannot fathom you or your tiny terrors not loving it. Pro tip: if you’re kids are prone to complaining about the texture of things, simply do not tell them there are hard-boiled eggs in this. They don’t need to know.


Easiest (and best) Potato Salad Ever!

What Goes In It  

2 lbs of potatoes (preferably Yukon gold or red), peeled and cut into 1” cubes  

3 hard boiled eggs, finely diced 

     1 cup of mayonnaise 

2 tbsp of Dijon mustard 

3 celery stalks, finely diced (about 1 ¼ cups) 

2 stalks green onion, finely diced (about ½ cup) 

¼ cup of fresh dill, minced (add this if your wife allows it, mine does not, which is

unfair, but marriage is all about compromise, I guess) 

Salt and pepper to taste 

 How You Make It 

  •  Place the potatoes in a pot of cold, salted water (2 tablespoons of salt will do) and bring

to a boil. Turn heat to medium and simmer until the potatoes are fork-tender, about 20-25 minutes or one Wiggles episode.

  • Drain and set aside to cool. While you’re waiting for them to cool down, clean up all your

children’s toys that are strewn across the floor even though you know they’re going to

be all over the place again in 5 minutes.

  • Now, in a large bowl combine the mayo, eggs, celery, Dijon, green onion, and dill (if

you’re allowed). Add the cooled potatoes into the bowl and mix until everything is

smooth and creamy. Add salt and pepper to taste but be prepared to add quite a bit of

salt because potatoes love salt. Who doesn’t though, really? Serve beside anything you

like, for any meal, at any time of year, because we’re rebels. My personal favourite way

to eat it is all alone on the couch after the kids are in bed, but you do you.
