I love trying new things, especially if those new things happen to be delicious. In the case of wheat berries, they aren’t so much new to me as new again. You see, may moons ago I worked at Loblaws in the deli & prepared foods department and one of my jobs was to fill the salad counter each morning. The benefit of this was that I got to taste each one as I filled. Sort of a “one for you, one for me” kind of situation. It was there that I first tried wheat berry and I instantly loved their somewhat chewy texture and nutty flavour. I feel like the dressing was some kind of Djion one or something like that. I didn’t really like it.
I was in the store the other day and I saw a bag of them on the shelf so of course I had to try and make them myself – only this time without the gross Djion dressing.
What are wheat berries and why should you eat them?
Wheat berries are a delicious whole grain that come from- surprise, surprise: Wheat! They contain good stuff like germ and bran because they are unprocessed so you can feel good about eating them. When you eat them you’re basically the healthiest person on earth!
The dressing I used is a take on green goddess dressing that I basically just threw in stuff that I like. Here’s a secret: in the recipe I normally use white balsamic but ran out so I used a pineapple white balsamic instead. If you don’t have either of those you could even try rice wine vinegar as it is a little bit sweet and that’s what you want. I love using it on green salads too!
