Fresh, hand-picked and green: warm asparagus and white bean salad!
Yesterday I went to a local farm to go strawberry picking with my son. If you’re in Ontario or anywhere else that it happens to be strawberry season, I highly suggest you go. While we were at the farm I picked up a few other veggies because if you know me, you know I can’t resist a good selection of locally grown veggies. I’ve been wanting to make a shaved asparagus salad for a while now so I was on the hunt for some hearty stalks just perfect for shaving. I was unfortunately for me, I was out of luck. There were no thick hearty stalks to be found. Just skinny tender asparagus as far as the eye could see. What was I to do?! Well, I’m not one to be thrown off by adversity so I bought those skinny suckers, brought them home, grilled them up and made an amazing alternative: Warm Asparagus White Bean Salad.
It works perfectly with the tender stalks and can just as easily be eaten cold. I also added some bacon to mine at the last second but it can be omitted entirely if that’s not your thing.
When I’m creating recipes I often get caught up in thinking that I need to have a ton of ingredients to make something great. But with this salad, as with many things in life in general, simple is best. Just a few quality ingredients make for a delicious meal. I think you’re really going to like this one!
Take your washed and trimmed asparagus and coat it with 1 tbls of olive oil making sure to cover each stalk.Then, season it with your pepper. You don’t need salt as the bacon and feta will make this salad salty enough.
Grill on med-high heat for about 10 mins., until you can see beautiful grill marks begin to appear.
Remove from heat and chop into bite sized pieces. Next in a bowl combine your asparagus, bacon, feta and beans and stir until well combined. Drizzle your remaining olive oil on top and serve. Enjoy!
