First of all Stacey, what is a compote and why do you keep using that word?? Compote is just a fancy way of saying fruit puree with syrup. No, this recipe doesn’t actually require syrup but you can add it if you like so it totally counts! Fruit compote for the win!
If you know me at all you know I have a chia seed pudding problem. I eat it all the time because it is stupidly easy to make, beyond delicious and makes me feel like I’m eating a decadent dessert when I’m really eating something healthy. I often make Chia Seed Pudding with Mango Puree but I live in Canada where mangoes never grow. It’s very sad. We get beautiful mangoes shipped up here in the summer months but I can’t go all year without chia seed pudding so I had to come up with an alternative. Enter the berry compote.
For this recipe I have used strawberries and blueberries, which are two of my favs, but you can easily substitute whatever berries you like. Blackberries, raspberries or a combination of all of your favourites would also be super delicious. If you do use berries with lots of seeds I might recommend straining your compote before you eat it but that’s just me. I don’t love all of the seeds. If you do then you absolutely don’t have to.
Use this compote recipe on top of oatmeal, nice cream, desserts or eat it by the spoonful! No one is judging you here!
