It’s the next recipe in my summer series and, as you well know, I love summer. I also love fresh herbs and produce. And summer is the time where those two things are in abundance. Lucky for you, I also love to eat healthy and I’m trying to move towards a plant-based diet in my own healthy living journey.
So, today, I give you my version of pesto. And, like anything else here on SGL, it’s “Not Your Average Pesto”. Yep, you know: it’s chocked full of subs.
Except for the olive because that’s a healthy oil and, also, I’m married to an Italian so there’s no way I’m giving up olive oil, guys. It’s not happening.
But, I’m all about substituting alternatives where I can and my twist on pesto hits three birds — that’s right, three! — with one proverbial stone.
- It’s easy on the pocket (you’ll see what we sub pine nuts with).
- It’s totally vegan.
- You can use this to meal plan ahead.
So, check out my recipe. Also, you’ll want to eyeball the amount of olive you throw in there while you’re actually blending it. Look for the consistency you want.
