My father was from Ireland, the land of potatoes. I love them dearly in all their forms. My mother’s family hailed from Finland, the land of saunas…and pancakes. Every special occasion in our house was marked with a big Finn pancake breakfast; christmas, easter, and every birthday. Finn pancakes, if you’ve never had them, look a lot like a crepe and are almost as much work to make. What I’m getting at here is that pancakes are a big deal in my house. Unfortunately, I don’t always have the time to whip up a huge morning breakfast. That’s where these babies come in. These pancakes that I’m sharing here are beyond easy to make and take no time at all. And best of all? You only need 3 ingredients to make them!
Full disclosure here: I originally made these pancakes with just 2 ingredients–eggs and banana. I’d read lots of posts about these amazing 2 ingredient pancakes and wanted to try to make my own. It was a major bust. The first problem was that they are almost impossible to flip so they become a gross banana/egg scramble in your pan. The next issue is that they do not cook through evenly so the outsides are nice and burnt and the insides are all gooey. Gross. The third problem I had was that they tasted like eggs. I like eggs but I do not like banana eggs.
So I decided to experiment with them a bit and see what I could create. It turns out that all that was missing was some instant oats to give them the bulk and fluffiness they needed!
If you’re trying to go gluten-free I would suggest picking up some Bob’s Red Mill Gluten-Free Oats.
